True, but when garlic releases the juices and moisture it reduces the anti microbial character of honey just enough to allow the good bacteria to start fermentation of garlic. About at-least 4-6 weeks but the longer it stays , the healthier it gets. Years old garlic is often found in villages in China and Japan where they are considered a delicacy.
